देहरादून:  प्रदेश की राजधानी में एक ऐसा स्थान है जहां पर जाकर आप मंडुवा की चाय, मंडुवा के मोमो, मंडुवा की कॉफी का भरपूर आनंद ले सकते हैं। स्थान है देहरादून का सर्वे चौक स्थित न्यू दून स्पाइस रेस्टोरेंट (New Doon Spices Restaurant)।

इस रेस्टोरेंट के संचालन कर्ता हैं सुभाष रतूड़ी , जो कि विदेश (कतर) से वापस आकर पिछले कुछ सालों से पर्वतीय व्यंजन में खासा प्रयोग कर रहे हैं। उनका अब एक और शानदार अभिनव प्रयोग है “मंडुवे का बर्गर”।

“मंडुवे का बर्गर” को लाँच करने से पूर्व इसकी प्रथम ग्रास (First bite) के लिए उन्होंने, मुझे व मेरी धर्मपत्नी  पूनम ध्यानी को आमंत्रित किया। उनके उद्देश्य व पहाड़ी कृषि उत्पाद पर उनके अभिनव प्रयोग की जितनी भी तारीफ की जाए कम ही पड़ेगी।

मंडुवा की चाय, मंडुवा के मोमो, मंडुवा की कॉफी और अब मंडुवे का बर्गर .जैसे सभी अभिनव प्रयोग लाजवाब हैं। साथ ही स्वादिष्ट व पौष्टिक भी हैं। सुभाष के पहाड़ी व्यंजनों पर अनोखी प्रतिभा को देखकर मैं खुद को रोक न सका और मैंने अपनी ओर से कुछ ठोस सुझाव भी उनको प्रेषित किए हैं।

विदेश में रहने के बावज़ूद सुभाष का लगाव पहाड़ के प्रति किस कदर है़ यह तो उनके रैस्टोरैंट के स्वादिष्ट पहाड़ी व्यंजनों से ही जाहिर होता है। मुझे पूरी उम्मीद है कि भविष्य में वो प्रदेश के युवाओं के लिए प्रेरणा के तौर पर देखे जाएंगे!
